Blueberry coconut and Lemon energy balls

Easy to make healthy vegan energy balls


  • Cashew or Almond nuts
  • Fresh lemon
  • Shaved coconut
  • Dates
  • Blueberries


  1. Blend a cup of Almonds or Cashew nuts in a blender until broken into little pieces and put in a mixing bowl
  2. Squeeze the lemon juice into the blender, add a teaspoon of shaved coconut and half a cup of blueberries
  3. Add a cup of dates into the blender and blend all ingredients until semi-smooth (i.e not liquid)
  4. Add the blended mix to the mixing bowl and mix in with the nuts
  5. Taste, add more lemon, coconut or blueberries if needed
  6. Roll small pieces into a ball using your hands, continue with the rest of the mixture
  7. Cool in the fridge for 15 minutes
  8.  Viola! Enjoy.
